Ingredients

    1 8-oz. package reduced-fat (neufchatel) cream cheese
    1.5 cups cool whip free
    1 cup 1% milk
    1 3.4 oz package jell-o lemon instant pudding mix
    .5 tsp vanilla extract
    .3 cups ground almonds
    zest and juice of 1/2 lemon

Directions

Grind almonds, add vanilla extract, mix. Press this mixture into muffin papers to cover bottom. Blend together cream cheese and milk. Add and blend pudding powder. Stir in cool whip and add lemon juice and zest til it tastes good to you. Pour mixture into muffin papers and freeze 4 hours.
