Ingredients
-
3/4 cup sugar
2 medium eggs
1 cup low fat vanilla yogurt
1/2 cup unsweetened applesauce
1 cup mashed bananas
2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1/4 cup low fat cream cheese
Glaze
1/4 cup low fat cream cheese
1 1/2 cups powdered sugar
2 teaspoons vanilla extract
2 Tablespoons low fat margarine
1/4 cup 2% milk
Directions
Preheat oven to 350 degrees F. Line muffin tins with paper or spray with non-fat cooking spray.
Mix wet ingredients together, except cream cheese. Mix dry ingreedients in seperate bowl. Combine both bowls, mix well. Spoon mixture into muffin tins filling each cup about 2/3rds full. Put about 1/2 teaspoon of cream cheese on top of muffin batter. Add another spoonfull of batter on top of the cream cheese to cover it. Put in oven. Check muffins after 15 minutes. If they are golden on top and a toothpick inserted in the center of a muffin comes out clean, they are done! If not, check every 5 minutes until they are ready.
As they are baking, mix together the glaze. After they come out remove from muffin tin. Drizzle the glaze over the top when they are still warm. Sprinkle cinnamon on top of the glaze & enjoy!
I wanted to add pecans, but didn't have them at the time. Nutritional information is for the ingredients I used. Unfortunatly I didn't have low fat cream cheese at the time so the nutritional information reflects the regular fat cream cheese.
