Ingredients

5 medium sweet potatoes
2 medium red potatoes
3 cups flour
1/3 cup grated parmesan
1 cup finely chopped watercress
1 garlic clove, crushed
4 tbsp butter
1/4 cup grated parmesan (extra)
2 tbsp chopped parsley
Directions
Boil sweet potatoes and red potatoes in skins until tender. Drain and peel.
Press potatoes through a ricer into a bowl. Add flour, parmesan, watercress, and garlic. Bring together with your hands until a soft dough forms.
Portion out the dough and use the back of a fork to create gnocchi shape.
Melt butter in a large roasting pan and preheat broiler to medium-high.
Cook gnocchi in salted water for 2 minutes or until they rise to the surface. Scoop out with a slotted spoon to drain off water.
Place gnocchi in roasting pan, toss with butter, and grill for 5 minutes. Sprinkle with extra parmesan and parsley.
Makes 6 servings.
