Ingredients

    1 Large Onion
    8 Cloves of Garlic
    2 28oz Cans Organic Crushed Tomato
    1 6oz Can Tomato Paste
    4 Tbsp Extra Virgin Olive Oil

    Seasoning:
    2 Tsp Salt
    2 Packets Trader Joe's Chicken Bouillon
    2 Tbsp Mixed Italian Herbs
    1/2 Tsp Cayenne Pepper (or a dash, depending on taste)
    1/2 Tbsp Crushed Red Pepper
    2 Whole Dried Bay Leaves

    About 5 minutes before the end add:
    3 Cups Spinach
    1 Cup Chopped Fresh Basil
    1 Tbsp Mixed Italian Herbs
    1/2 Tbsp Crushed Red Pepper

Directions

Coarsely chop onion and garlic. Heat stock pot on medium-high heat, add 4 Tbsp olive oil. When you smell the olive oil fragrance, throw in the garlic, stir and cook for 1 min. Add onion, cook for 2 min. While onion cooks, add Italian herbs, cayenne, red pepper, salt. Stir together, until onions become translucent. Add bay leaves.

Add ground turkey to the pot, stir onions and herbs into meat as it browns. Stir in the can of tomato paste. Add crushed tomatoes (both cans). Stir in one to two packets of chicken bouillon, to taste. Bring sauce to a boil, then reduce heat to medium-low and cover.

Simmer on medium-low for 40 min, stirring occasionally.

At 40 min, stir in spinach, basil and the rest of the herbs and red pepper. Simmer for 5 more minutes.

Serve on whole wheat pasta!
