Pure Summer comfort food. A definite treat that goes great with salmon or chicken. Pure Summer comfort food. A definite treat that goes great with salmon or chicken.

    2.5 lbs red potatoes, scrubbed and cut into about 1 inch chunks--leave skin on!
    2 TBL olive oil
    2 TBL butter
    1.5 TBL dried parsley(or triple the amount of fresh)
    1/2 teaspoon salt
    1/4 teaspoon black pepper(or to taste)


Cook potatoes until fork tender in a large pot of water. Drain water. Add oil, butter and parsley and stir. Add salt and pepper and stir again. I am not very gentle with the stirring since it's nice to have some of the potatoes a little smooshed. Makes about 8 1-cup portions.
