Introduction

Ingredients

    16 oz Red Beans
    16 oz Petite Diced Tomatoes
    4 slices lean 98% ham steaks, diced
    1/4 tsp garlic powder
    1/2 tsp NoSalt
    2 tbsp dried minced onion, or 1/3 cup fresh minced onion
    1 packet boil in bag brown rice

Directions

Combine everything but rice (undrained) in sauce pan. Bring to boil, then lower heat to simmer and cover. Simmer for at least 20 minutes.

About 12 minutes before serving, cook rice as package instructs. Combine with mixture or serve seperately.

Because of the sodium in the ham, I use NoSalt - you can probably substitute low sodium beans and tomatoes. Or substitute any other kind of lean meat - change cooking time accordingly.
