Introduction

Bell peppers stuffed with groud beef & rice with spiced up tomato sauce topping. Bell peppers stuffed with groud beef & rice with spiced up tomato sauce topping.
Number of Servings: 4

Ingredients

    1 lb gound lean beef
    1 egg fresh
    1 cup instand brown rice
    1 tsp salt
    1/4 tsp pepper (or to taste)
    3 bell peppers (cleaned & cut into half)
    1 can Campbell's tomato soup
    1/2 cup milk (may add water)
    1-2 tbsp sugar
    1-2 tsp taco seasoning mix (may add more to taste)

Directions

BELL PEPPERS (3)

wash peppers
slice in half & remove insides

SAUCE:

1 can Campbell's tomato soup
1/2 cup milk (may substitute water)
1-2 tbsp sugar

Wisk ingredients together and pour over pepper mixture. In crockpot or stove top cook on medium to low heat until cooked through.

STUFFING

In medium size mixing bowl combine:
gound beef
rice
egg
salt & pepper
taco seasoning

Thoroughly mix ingredients together & stuff halved peppers with mixture. Will usually mound over pepper halves.
Place stuffed peppers in medium to large size pan on stove top or in medium crockpot & cook on medium temperature until throughly cooked. About 45 minutes on stove top or 4-6 hours in crock pot. (May cook in crockpot on low all day.)

Serve with rolls & salad.
