A great summer dressing--light and refreshing. You can use less sugar (we are going to use 1/2 the amount next time). A great way to batch cook your extra summer basil!

Ingredients

    * Granulated Sugar, 2/3 cup
    * Cider Vinegar, 2 cup
    * Olive Oil, 4 cup
    * Salt, 1 tbsp
    * Pepper, black, 1 tbsp
    * Garlic, 12 cloves
    * Basil, 50 tbsp ( 3 Cups loosely packed leaves)

Directions

Serving size is one tablespoon. This recipe makes 96 tablespoons.

50 TBS of Basil = 3 loosely packed Cups.

Blend all ingredients together (by hand mixer, blender, or immersion blender).

Store in refrigerator.
