Ingredients

    Louis Kemp, Crab Delights-imitation crab, 2 cup
    Sour Cream, reduced fat, 1 tbsp
    Louisiana Remoulade Dressing, 1 tbsp
    Green Tomatoes, 2 medium
    Flour, white, 1 cup
    Egg, fresh, 1 large
    Olive Oil, .5 cup
    Swiss Cheese, 6 slice (1 oz)

Directions

Pre-heat over to 350 degrees. Slice green tomatoes and soak in beaten egg. Dredge in flour to coat both sides. Put olive oil in skillet and turn on medium-high heat. Fry tomatoes until golden brown, about 5-7 minutes on each side.

While tomatoes are cooking, mix remoulade, sour cream, shredded crab meat and spices to taste in mixing bowl.

After tomatoes are done, lay on paper towl to drain and dry. Place tomatoes on cooking pan. Using an ice cream scoop, scoop crab mixture onto tomato. Cover with a slice of swiss cheese. Place in oven for approximately 10 minutes, or until cheese is melted.

Serving size = 1 tomato melt
