Ingredients

    1 pie crust
    3 large eggs
    Milk (see directions)
    1/2 cup shredded Swiss cheese
    1 10 oz package frozen chopped spinach
    5 or 6 green onions
    2 Tablespoons butter

Directions

Put frozen spinach in a strained and run warm water over until thawed. Melt butter in skillet and add chopped green onions (I use the green tops also). Saute briefly and add thrawed chopped spinach. Saute until spinach is limp. Let cool. Break eggs in a large measuring cup and add milk until 1 1/2 cups of liquid. Mix well. Add cooled spinach/onion/butter mixture to egg/milk mixture. Blend well. May season with salt, pepper and nutmeg. Pour into pie shell. (I use a homemade crust in a quiche pan, but frozen crust may be used. Bake at 375 degrees F for about 35 minutes, or until brown on top. Let cool and slice into 8 portions. Quiche should be served at room temp. I freeze individual slices for work lunches or breakfast.
