Ingredients

    2 turkey tenderloins
    1 tsp. garlic, minced
    1 Tbs. red onion, minced
    1/4 C of brown mustard
    1/8 C. vegetable broth
    1 tsp. poultry seasoning

    1/2 C. sliced onions or any other vegetable sliced to rest the tenderloins on in the pan.

Directions

Combine all ingredients except sliced onions in a zip lock bag and let marinate for 15 minutes to 1/2 hour. Place sliced onion in the bottom of a small roasting pan and place turkey with the marinade on top. Bake for 40 minutes at 350 or until cooked through. Serve onions on top of turkey portions.

    Incredible!
    I tried this recipe with Dijon mustard because it is my favorite. I also add sliced mushrooms to the bed of onion. This was so good! Juicy and flavorful. Will be making this more often! - 10/19/10
