Introduction

This is my own healthier version of the Zuppa Tuscana that they serve at the Olive Garden. It is not the same, but just as tasty. I used reduced fat sausage, lower sodium turkey bacon and 1% milk instead of the alternatives (regular sausage, regular bacon and heavy cream). And I LOVE the Kale so I added and extra cup to my recipe than you might like, so adjust that as necessary. This is my own healthier version of the Zuppa Tuscana that they serve at the Olive Garden. Ingredients

    Jimmy Dean Reduce Fat Sausage
    1 1/2 tsp Crushed Red Pepper
    Extra Virgin Olive Oil 2-3 Tbsp.
    1 large white onion chopped
    4 cloves of garlic minced
    4 slices of Butterball lower sodium turkey bacon, diced up
    1 fat free can of chicken broth
    4-5 cups of water
    1 cube chicken bouillon
    4 thinly sliced medium potatoes
    4 cups 1% milk
    2-3 cups of kale, broken up into bite sized pieces

Directions

Brown the sausage and red pepper flakes in a pot.

Once browned, set aside in a separate bowl in fridge until later on.

In same pot, saute onion, garlic and cut up turkey bacon until onion is soft and turkey bacon is cooked.

Add chicken broth, water and boullion and bring to boil.

Add sliced potatoes and cook for 20-30 minutes or until potatoes are soft.

Once potatoes are cooked add milk and stir.

Add sausage and kale and cook until kale is at desired texture.

Serve warm!
