Ingredients

    3 Very Ripe Bananas
    1/3c. Canola Oil (recipe could be adjusted to use applesauce or packed pumpkin instead)
    1 1/2 c. Whole Wheat Flour
    1tsp. Baking Soda
    1tsp Salt
    1.5 tsp. Vanilla Extract

Directions

Makes 20 servings (loaf pan, 10 slices cut in half - or 20 mini muffins, etc.)

Preheat oven to 375. Bake one hour for loaf pan, less for muffins (probably 25-30 min). 8x11 pan 35-40 minutes.

    Very Good
    Great recipe! It was simple and delish. I did add chocolate chips b/c I wasn't sure how sweet it would be w/o something sweet. DH said it didn't really need it. But basically to get 20 pieces, you have to have 1/2 a slice. Still a good treat. - 8/1/10
