Introduction

A quick omelet I made up one day because I had tomatoes and fresh mozzarella I wanted to use. I am sure it would be great with fresh basil, but I did not have any, and I don't care for the strong flavor. Ingredients

    4 oz grape tomatoes, halved
    2 oz fresh mozzarella, chunked
    1/2 cup egg whites (papetti)
    dried basil and pepper to taste
    few shakes balsamic vinegar

Directions

Heat skillet over medium heat. Add egg whites.
While eggs are setting, sprinkle vinegar, pepper, and basil over tomatoes and cheese. When eggs are almost done to your liking, add tomato mixture and fold omelet over. Cook to desired consistency.
