Ingredients

    *Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw, 2 lb - trimmed of most fat
    *Chipotle chilis en adobo sauce (2 T.), 14 serving
    *Better than Bouillon Beef Base - organic, reduced sodium, 3 tsp
    Water, tap, .5 cup (8 fl oz)
    *Kosher Salt, 0.25 tsp
    *Rice Wine Vinegar, 2 tbsp
    Onions, raw, .5 cup, chopped
    Garlic, 6 cloves

Directions

makes roughly 10 3 oz servings

Trim pork and cut into 3 inch chunks

blend remaining ingredients and coat the pork well. I do this in a food saver sealed bag, a heavy duty zip lock or any air tight container will work.

Marinate 4-48 hours

double up some heavy duty foil, dump pork and marinade into foil and wrap into a packet.

Good, lid down, in a 500 degree grill for 30 minutes - top rack or raised above the lower grills, then allow to set - in foil for 10 more ... shred, dice or grab chunks as needed and enjoy
