Ingredients

    Combine in a skillet:
    1 eggplant, chopped and peeled
    1 medium onion, diced
    1/3 green pepper, chopped
    4 oz. can mushrooms
    2 cloves garlic, minced
    3 Tbsp. salad oil
    Cover pan, simmer 10 minutes

    Add:
    1 tsp. salt
    1 tsp. oregano
    1/2 tsp. sugar
    1 can tomato paste
    1 C water
    2 T red wine vinegar
    1/2 C chopped stuffed green olives
    1/4 C capers

    Mix and cook 20 minutes. Serve with cracker or chips, in a pita or with pasta.

Directions

Mix first 6 ingredients (eggplant-oil) in a pan, cover and simmer for 10 minutes. Add remaining ingredients (salt-capers), mix and cook for 20 minutes. Serve with crackers, in a pita or over pasta. Makes 8 1/2-Cup servings.
