Ingredients

    Water, tap, .5 cup (8 fl oz)
    Olive Oil, 1 tbsp
    Salt, .5 tsp
    Yeast, bakers, 1 tbs dry
    *Flour, white, .75 cup
    *Whole Wheat Flour, 1 cup
    *Sweet Baby Ray's Honey Barbeque Sauce, 8 tbsp
    Chicken Breast, no skin, 8 ounces
    Cheddar Cheese, 1.5 cup, shredded

Directions

Combine the warm water, oil and salt in a small bowl. Sprinkle on yeast. Let stand til foamy. Combine both flours in a food processor. With the machine running, pour the yeast mixture through the feed tube. After the dough forms a ball, turn out onto a lightly floured counter. Knead briefly until smooth and elastic.

Spray a large bowl with cooking spary put the dough in the bowl and cover. Let sit til double in size, about 1 hr.

Meanwhile, cook the chicken by any means you want. Let cook and shred or chop or cube. Whatever.

Preheat the oven to 400 degrees. Punch down the dough and roll into a 12 in circle. Spray a cookie sheet and lay the dough on top of it. For a crisp crust, bake until slightly brown. The top the crust with the bbq sauce (I water it down a little with a tablespoon or two of water to make it spread a little easier and stretch it a little farther) Top with cooked chicken, then top with cheese. Bake again at 400 for about 10 minutes or until cheese it melted and it looks good to you.

Softer crust, skip prebaking the crust. Top the unbaked crust as above, and bake for 12-15 minutes or, again, until the cheese is melted and it is done to your likeness.
