Introduction

Used lighter and healthier ingredients for my version of another users bars. Used lighter and healthier ingredients for my version of another users bars.
Number of Servings: 16

Ingredients

    For Bars:
    3/4 c. egg substitute
    2 c. unpeeled grated zucchini
    1/4 c. oil
    3/4 c. unsweetened applesauce
    2 1/2 c. whole wheat flour
    2 c. granulated sugar
    1/2 t. baking powder
    1/2 t. salt
    2 t. cinnamon
    1/2 t. baking soda
    1/2 c chopped nuts (optional - no in nutritional calculation)

    For Frosting:
    1/4 c. soft butter
    1 T. soy milk
    2 c. powdered sugar
    4 oz. reduced fat cream cheese
    1 t. vanilla

Directions

For bars:
Mix ingredients in order, by hand or by mixer. Pour in greased (11x 17) pan. Bake at 350 for 30 minutes. Frost when cooled. Cut in bars that are approximately 2.75 in. x 2.42 in.

For Frosting:
Mix all ingredients and spread on cooled bars - should be stored in refrigerator or cool place.
