    2.5 c whole wheat flour
    2 tsp baking powder
    1 tsp soda
    1 tsp shredded lemon rind
    3/4 tsp salt
    1/2 tsp cinnamon
    1/4 tsp ginger
    4 egg whites (8 tbsp egg white substitute, or 2 beaten eggs)
    1 c sugar
    1/4 c oil
    1/4 tsp orange flavor (or use orange juice)
    2 c finely shredded zucchini
    .5 c nuts


Mix dry ingredients. Beat eggs, oil, sugar and flavors. Add all together and stir. Pour into a mini loaf pan (8 mini loaves). Bake 30-35 minutes at 350 degrees. You could also use a muffin tin to make 12 single servings.
