Introduction

Easy to make, easy to eat! Easy to make, easy to eat!
Number of Servings: 6

Ingredients

    3 packets (750 g) Frozen spinach
    2 tbsp butter
    1 small finely chopped Onion
    1 clove garlic finely chopped
    2 tbsp Plain Flour
    4 cups Chicken Stock
    Salt & Pepper to taste
    1/2 tsp Nutmeg (or to taste)
    1 cup light cream
    Cayenne Pepper to taste

Directions

1. Place unthawed spinach in a saucepan, cover & cook gently for 10 min or until soft. Drain well & transfer to food processor.
2 Place butter in a saucepan and cook onion& garlic until soft.
3.Sprinkle flour & stir until onion is golden.
4.Add stock & boil for 5 min stirring.
5.Add half this liquid to the spinach in the food processor & puree until smooth. Return to the saucepan & season with salt, pepper & nutmeg.
6. Add cream & heat gently. Do NOT boil.
7. Serve with a sprinkle of cayenne.

Makes 6 serves (2 ladles per bowl!)
