Makes four servings of one cup each. Makes four servings of one cup each.

    2/3 cup Casserole Sauce Mix (chicken)
    2 1/2 cups water
    1/2 cup diced carrot
    1/2 cup diced celery
    2 tablespoons Margarine Like Spread Country Crock Regular
    2 cups diced raw potatoes
    1/2 cup shredded cheddar cheese
    1/2 teaspoon salt
    dash pepper


1. Saute carrot and celery in a skillet with the margarine until somewhat tender. 2. Cook potatoes in water to cover for a few minutes until almost done. Drain potatoes reserving liquid.
3. Whisk together the Casserole Sauce Mix and 2 1/2 cups reserved liquid. NOTE: You need 2 1/2 cups liquid; if you don't have enough, add water to make 2 1/2 cups. 4. Add all vegetables. Simmer until thickened and vegetables are desired tenderness. 5. Add cheese to melt. 6. Season with the salt and pepper.
