Introduction

Given to me by one of our Fit-4-Life participants. Given to me by one of our Fit-4-Life participants.

Ingredients

    Canola Oil
    2-3 boneless, skinless chicken breasts, cubed
    1 package turkey sausage, cubed
    1 Tbsp margarine
    1 green pepper, diced
    1 onion, diced
    2 celery stalks, diced
    1-2 Tbsp unbleached flour
    2 cans chicken stock/broth
    garlic to taste, diced
    1 can diced tomatoes
    1 Tbsp chili powder
    1 Tbsp cumin
    salt & pepper to taste
    2 bay leaves
    2 cans black beans, drained
    1 can drained or frozen package corn

Directions

Brown cubed chicken and turkey sausage in canola oil. Once browned, drain fat and set aside. In your largest skillet add margarine and some canola oil and saute green pepper, onion and celery until soft. Once soft add the chicken and turkey sausage back in and continue to cook for a couple of minutes. Add whole wheat flour to firm it up. Add in the chicken stock and garlic. Add in spices and tomatoes and bring to a boil. Reduce heat to simmer. Add beans and corn and continue to simmer for a few more minutes.

*Orignal recipe didn't call for rice, but mine was soupy the first time making it so I added some Minute brown rice at the end and it thickened up nicely.

I measured this out to be 13, 1 cup servings once cooked.
