Ingredients

    4 frozen talapia fillets
    2 tbsp butter, divided into 4 pats
    1 tbsp ground oregano
    1/2 tbsp garlic powder
    Splash of lemon juice
    Butter flavored cooking spray.

Directions

Spray pan with cooking spray. Heat the pan for about 2 minutes over medium-low heat. Place talapia fillets in hot pan. Coat the fish with lemon juice (fresh or from a squeeze bottle, either works well), sprinkle oregano and garlic powder over the fish, and place a pat of butter on each. Cook covered over low heat about 3-4 minutes per side, flipping once. Makes 4 4-oz servings or 2 8-oz servings.

    It was pretty good (and very quick with frozen fish), but it was a little much as far as the lemon and oregano. I will probably make it again, but I will play around with the seasoning. - 11/4/10
