Ingredients

3 cups whole wheat flour
1 cup unbleached all-purpose flour
1 tsp. salt
1/2 c. olive oil
1 1/2 cups boiling water
Directions
Makes 18 med sized tortillas
Place flours, salt and oil in mixer. Blend at low speed until mixture resembles an small pebble texture. Boil water. Switch to dough hook in mixer. Form a well and add water in a slow stream, while mixing at a low to med . speed. Mixture will form a ball and will start to take on a smooth texture. Add flour if it seems sticky or too wet to form a ball. Remove from mixer bowl and knead 3-4 turns. Divide dough into 18 golf ball sized lumps. Let rest on a tray covered with a slightly damp cloth for 1 hour. The resting stage is crucial! Heat a non-stick griddle to high heat . Roll each lump to a thin circle and place on heated griddle. "Fry" until you see a bubble start to form. Flip and "fry" opposite side about 35 seconds. Cooking too long will make the tortillas too crisp.
