Ingredients

1 1/2 c granulated sugar (or 1/2 sugar and 1/2 sugar substitute)
1 1/2 c water
6-8 sprigs of fresh lemon thyme
1 1/2 cups fresh lemon juice
Zest from 1 lemon
Directions
Makes 5 1/2 cup servings
Mix the sugar and water in a saucepan on the stovetop just to boiling. Remove from the heat. Add the sprigs of Thyme or Lemon thyme preferred and the lemon zest. Let set 15-20 minutes for flavors to blend. Add the fresh squeezed lemon juice and let cool to room temperature, transfer to plastic container and refrigerate overnight/.
Freeze according to the manufacturers directions for your ice cream freezer. The sorbet will be soft when finished. You can transfer to a freezer container and freeze for another hour or two before serving if you prefer a harder consistency
This can be frozen in a plastic container. Mix once 1./2 thawed and let warm up before serving.
