Introduction

Crunchy apples and sweet pickle relish make this tuna salad great on sandwich thins or crackers as well as on lettuce greens. Crunchy apples and sweet pickle relish make this tuna salad great on sandwich thins or crackers as well as on lettuce greens.
Number of Servings: 5

Ingredients

Light tuna packed in water, drained (1 large can + 1 small can)
4 T Olive Oil Reduced Fat Mayonnaise
1 Large Apple (peeled and finely diced)
    1 T sweet pickle relish

Directions

Mix tuna, mayonnaise, apple and relish. I like to use my salsa maker and put the apple in first to chop it into small bits and then add the other ingredients to blend together.

Makes 5 1/2-cup servings.

Serving suggestion: Serve with whole wheat sandwich thins. Split the sandwich thins and put on griddle or skillet over medium heat to warm. Sprinkle a little bit of your favorite cheese on one half. When cheese has melted and bread is crispy, put 1/2 cup of tuna apple salad on the other half. Put both halves together and serve with fruit.
