Introduction

Still tweaking recipe b/c not sure on exact amounts i am using and i am awful at ballparking it ;)

Next time try jalapeno and chedder but no garlic

Ingredients

    2lbs red potatoes, cut into 1/8ths
    2 small zucchini, sliced
    2 small yellow squash, sliced
    2-3cups of cherry tomatoes cut into halves
    1tbsp +2tsp garlic, diced
    1/2 cup sliced onion
    1/2 large red bell pepper, sliced
    1/2 large yellow bell pepper sliced
    1/2 cup parmesan
    Favorite sesoning, to taste (I recommend penzey's pasta sprinkle)

Directions

mix all ingrediants in a large mixing bowl making sure that everything is evenly coated with oil.

Put everything in a casserole dish and place cheese on top. Bake @450 for 25min
