Ingredients

    Basmati Rice - measured to the 10 fl oz level in glass jug
    Boiling Water - measured to the 20 fl oz level in glass jug
    1 tablespoon oil
    1 small onion, finely chopped
    2 cardamom pods
    1 whole cinnamon stick
    3/4 teaspoon cumin seeds
    1/2 teaspoon coriander seeds
    2 teaspoons turmeric
    Salt

Directions

Crush the cumin & coriander seeds in a pestle & mortar. Heat the oil in a large frying pan (with a lid) and fry the onion until golden. Stir in the spices. Stir in the rice until nicely coated with oil, then pour in the boiling water. Stir once only, put the lid on, turn the heat down to its very lowest and cook for exactly 15 minutes.
