Ingredients

    .5 T butter
    2 eggs
    1/2 c flour
    1/2 c milk
    1/4 t salt

Directions

Put butter in 8" round cake pan, or equivalent size. Place in oven while preheating to 425 degrees. Meanwhile, mix all other ingredients in a bowl til smooth (some small lumps are OK). Remove pan from oven when butter is melted and turn to coat the bottom of the pan. Pour batter into melted butter in the pan and replace in 425 degree oven. Cook for 12 minutes or until it is puffy and edges are a rich golden-brown.

Eat with powdered sugar, syrup, peanut butter, jam, or whatever you like. Could even be eaten as savory. Serves one.
