Ingredients

    3/4 cup mashed very ripe banana (about 1 large)
    1/4 cup honey or maple syrup
    1/4 cup plain nonfat yogurt
    2 Tbsp melted butter
    1 egg
    1/2 teaspoon vanilla
    1/4 teaspoon salt
    1/2 tablespoon baking powder
    2/3 cups whole wheat flour
    1/3 cup protein powder

Directions

Get out your favorite big bowl. Peel the banana and mash it with a whisk until almost liquid. Cream in the sugar. Add the yogurt, melted butter,applesauce, egg and vanilla. Beat until it is smooth and satiny. You may use electric beaters if you prefer, but a whisk works really well. Add the salt, baking powder, protein powder and flour. Mix again until all is lump free and sort of fluffy. Turn the mixture into a well oiled 8 x 8-inch square pan (or a round cake pan). Bake at 350° for about 30-40 minutes. The cake is done when it is golden brown, the edges have pulled away from the sides of the pan, and the top springs back when pressed lightly in the center. Cool thoroughly and frost with chocolate or vanilla frosting. Or simply dust with powdered sugar.
