Ingredients

    1/4 cup all purpose flour
    1/4 cup flax seed meal
    1/2 cup whole wheat flour
    1/3 cup whey protein powder
    1/2 cups natural sugar (or mixture of sweeteners)
    3/4 teaspoons baking powder
    3/4 teaspoons baking soda
    1/2 teaspoon salt
    2 1/2 Tbsp cup shortening
    1/3 cup soured milk
    1 large mashed banana
    1 large egg
    1/3 cup walnuts, finely chopped

Directions

Get out a large bowl and combine the protein powder, flour, sugar, baking powder, baking soda and salt. Add the shortening and a little bit of the sour milk. Beat for 2 minutes. Because this is quite a bit of dough, I like to use my hand mixer or kitchen aid for this. Add the egg and the remaining milk. Beat for 2 more minutes. Fold in 1/3 cup finely chopped nuts. Pour into one 9-inch cake pan (or any pan that is fitting for the batter) that has been greased and floured (or use a nonstick spray). Bake your cake at 350 degrees for about 30 minutes. Let them cool completely on a wire rack before frosting.

Serve with a dollop of yogurt and sliced bananas.
