A friend of mine knows how much I love sushi, but i cannot get it anywhere around where i live. So she found this easy sushi spring roll recipe that I LOVE. Ingredients

    5 - Rice Paper, sheets
    1 - Carrot, medium
    1/2 - Cucumber, peeled
    5oz - Imitation Crab

    2 Tbs - Soy Sauce

Directions

Cut the Carrot into thin strips, peel and remove the seeds from the cucumber and cut into thin strips. Set out Imitation crab with carrots and cucumbers.

Run the Rice paper under cool water until it is soft and pliable (about 10-15 seconds) Place the rice paper sheet on a plate and smooth out any wrinkles.

Place crab, carrot, and cucumber in the center of the rice paper wrap and tightly roll the contents up, be sure to tuck the side in before the last roll. It should look like a mini egg roll.

Cut in half and serve with soy sauce as a dip.

This recipe makes 5 spring rolls.
