Ingredients

    1.5 lbs of grated Zucchini (or 3 cups)
    1/2 cup Onion, chopped
    1/2 cup grated Parmesan Cheese
    1/2 tsp Oregano
    1/4 tsp Pepper, black,
    2 cloves of Garlic minced
    1/2 cup Canola Oil
    4 Eggs
    1 Cup Heart Smart Bisquick mix

Directions

Shred the zucchini - 1.5lbs of zucchini
Grease or spray bottom and sides of a 13 x 9 pan
Mix all ingrediants together
Spread in pan
Bake at 350 degrees for 56 minutes until brown all over - cool and cut into 24 pieces - 4 rows by 6 rows

    Very Good
    Very good and easy. I used about a 1/3 cup blue cheese instead of all parmesan. Also I only used half the oil. (I used olive oil ) A couple of TBS bacon bits would a nice touch! - 4/24/16

    I made this for a women's club Christmas Party. I was very pleased with the way it turned out, and at the end of the party, the plate I had brought was completely empty. I will be making it again. - 12/6/12

    Very Good
    This is basically an "impossible pie" and easily adapted to other vegetables/fruits,herbes/spices. Omit oil. Good warm or cold. - 9/23/11
