Ingredients

    8 ounces boiled Rings macaroni pasta
    1/2 cup fine chopped onion
    1/2 cup fine chopped celery
    1/4 cup chopped sweet pickle
    4 chopped, hard boiled eggs
    1 dash salt
    about 3/4 cup low fat mayonnaise (adjust to taste)
    2--6 ounce cans tiny shrimp, drain one can. Use juice from one can. It adds more flavor.

Directions

Boil macaroni until tender (not mushy) with dash of salt. Boil eggs. Drain water from pasta, rinse with cold water and drain. Peel eggs and chop. Mix in bowl pasta, chopped eggs, chopped onion, chopped celery. Cool then add all other ingredients. Mix well and chill in refrigerator for several hours for flavor to draw through. Add a bit more mayo, if needed. This makes 8 servings.

This makes a nice lunch served on a bed of lettuce with a wedged tomato and a piece of fruit.

    Very Good
    I don't like low fat mayo, so I just used a 1/2 cup of reg mayo. This tasted a lot better! - 8/8/12
