Number of Servings: 3


    1 cucumber, diced
    2 roma tomatoes, seeded and diced
    1 small onion, chopped
    1/4 avocado, diced
    1 clove garlic, minced
    1/3 cooked quinoa
    1 oz feta cheese, crumbled
    Juice from one lime
    salt to taste


Chop, mince, dice what needs chopping, mincing and dicing.
Toss with lime juice and salt.
Sprinkle with feta.

    I replaced the lime juice with 3 T olive oil, 2 T apple cider vinegar and 1 T Splenda. Delicious - 5/29/11
