Introduction

A great way to use overripe bananas. These muffins are low in fat and are a great way to start the morning. I love them as a pre-workout snack! A great way to use overripe bananas. These muffins are low in fat and are a great way to start the morning. I love them as a pre-workout snack!

Ingredients

    1 1/3 C whole wheat pastry flour
    1 Tbsp baking powder
    3/4 C mashed, overripe banana
    1/2 C unsweetened vanilla almond milk (or other non-dairy milk)
    1/4 C sugar-free maple syrup
    2 egg whites
    2 C non fat or low-fat granola (I used Galaxy Granola Not Sweet Vanilla)

Directions

Preheat oven to 350 degrees. In a large bowl, combine flour and baking powder and stir to combine. Add banana, almond milk, syrup and egg whites. Stir until moistened. Stir in 2 cups of granola, reserving a few tbsps for topping. Add batter to greased or lined muffin tin and fill 3/4 full. Sprinkle reserved granola on tops of muffins. Bake for 15 minutes or until a toothpick inserted in the center of the muffin comes out clean.
