Introduction

Ingredients

    2 Tbs Olive Oil
    1 Cup Celery, sliced on diagonal
    2 Cups fresh chopped cabbage
    1 Cup fresh carrots sliced on diagonal
    1 small onion chopped
    1 cup fresh snow peas, chopped or can use frozen green peas
    2 Cups cooked white rice, can use brown rice
    2 eggs, slightly beaten
    2 Tbs lite soy sauce
    8 oz small raw, cleaned shrimp, can use frozen

Directions

In large non stick skillet, heat olive oil and add onion, stir until becomes clear. Add other vegetables and keep stirring until heated through, still crispy. Add cooked rice and heat. Make a "well" in the middle of skillet and add beaten eggs, stir the rice mixture back into the eggs and cook until done, add shrimp cook till heated through and shrimp is done. Remove from heat, add soy sauce and serve.
Serves 4 for main course
Serves 6 for side dish
