Introduction
Was originally a chicken dish but I have always loved the flavor of peaches and pork together. I also added the pecans to the stuffing for a little crunch. Ingredients

1 29 oz. can peaches in pear juice
6 thin sliced boneless pork chops
2 Tbsp. canola oil
2 Tbsp. Butter
1 Tbsp. brown sugar
1 Tbsp. cider vinegar
1/8th tsp. allspice
1 Box stovetop stuffing whole wheat dry mix
1/3 C. chopped pecans
Directions
1. Drain peaches reserving 1 cup juice. Dice peaches and set aside. You may wish to leave a few slices whole for garnish.
2. In a large skillet brown pork chops in oil for 4-5 minutes per side. Add reserved juice, butter, allspice, brown sugar,vinegar, and pecans to pan. Bring to a boil then reduce heat cover and simmer for 5 minutes.
3. Add peaches and dry stuffing mix to pan. Stir until moistened through. Remove from heat, cover and let stand for 5 minutes. Makes 6 servings of 1 pork chop and approx. 1/2 c. stuffing mixture each.
