Introduction
Went looking for a simple, lower carb cake recipe that used ingredients I actually had....lolFound this recipe here, except it used sugar and reg milk. So not so low carb.
Switched to Splenda and Carb Count Down and brought the carb count down.

Number of Servings: 12
Ingredients

1 3/4 C Flour
1/2 C Coco Powder
1 tsp Baking Soda
1/2 tsp Salt
1 1/2 C Splenda
1/2 C softened Marg
1 tsp Vanilla Extract
2 Eggs
1 C Hoods Carb/Calorie Countdown
1/4 C Flax Meal ( you may have to adjust liquids/flour)
Directions
Preheat oven to 350.
In a small bowl combine flour, cocoa, baking soda, and salt.
Set aside.
In a large bowl combine sugar, butter and extract, beat well.
Add eggs one at a time, beating well after each addition.
Gradually blend in flour mixture alternating with milk.
Place in a greased 9x13 pan.
Bake for 25 to 30 minutes
When cooled cut into 12 pieces.
