Introduction

Ingredients

4 cups fresh blueberries, mashed
1 cup water
1 box Bernardin No Sugar Needed Pectin
1.5 cups Splenda No Calorie Sweetener (if desired)
Directions
Mash blueberries until you have a thick soup-like consistency.
Add blueberries, water and pectin to saucepan, making sure you stir to dissolve the pectin. Turn burner to medium heat, stirring occasionally.
Once the mixture starts to heat up, add Splenda (if using other type of sweetener, add it AFTER the boil), stirring until mixed in. Turn heat to high and boil mixture hard for 3-5 minutes, stirring constantly.
Immediately after boil, spoon into jars and seal lids. Keeps up to 3 weeks in refrigerator or can be frozen for up to one year.
Makes approx 80 servings of 1 tbsp each.
