Ingredients

Chicken Breast (.5 breast)
Pamala's Gluten Free Bread Mix (1/2 serving or 15 grams)
Ground Oregano (1 tsp)
White Pepper (1 tbsp)
Parsley (2 tbsp)
Ground Ginger (1 tbsp)
Trader Joe's Omega 3 Egg (.5 egg)
Balsamic Vinegar
Spinach (2 Cups)
Newman's Own Balsamic Light Dressing (4 tbsp)
Orange Bell Pepper (.25 cup chopped)
Red Ripe Tomato (1 small tomato)
Directions
Preheat oven to 375 F
Combine balsamic vinegar & egg in a small bowl
Combine bread mix & spices in a separate bowl
Dip chicken breast in the liquid bowl, make sure to cover the entire chicken breast.
Then dip chicken into the spices bowl, try to get it as covered as possible in the flour/spice mix.
Spray casserole dish with baking spray (I used 0 calorie PAM) and place chicken in the pan. Bake for 20 minutes, take chicken out of the oven and flip, then bake for another 20 minutes or until fully cooked.
Toss spinach, bell pepper, tomato and salad dressing in a large bowl and add chicken.
Makes 2 servings.
