Introduction

Number of Servings: 8

Ingredients

    2 lbs. skinless boneless chicken breast, cut into strips (could be done after cooking)
    1 lbs. baby carrrots
    1 lbs, baby red potatoes, cut in half
    1/2 lbs finely chopped onions
    4 cups low sodium vegetable broth

Directions

Place chicken on bottom of slow cooker, add potatoes, carrots, and onions. Pour vegetable broth over top. Cook on low for about 6 hours or on high about 1 1/2 hours or until potatoes are tender.

    I made it hoping it would be done on high in an hour and a half like it said but was not. It had to be cooked at least another hour on high. - 4/30/15
