Ingredients

    1 c. granulated sugar, 1 cup
    1 c. white flour
    1/4 c. margarine, like Smart Balance
    3 c. fresh apples, diced into large pieces, core removed
    1 large fresh egg
    1/4 c. walnuts, coarsely chopped
    1/2 tsp. salt
    1/2 tsp. baking powder
    1/2 tsp baking soda
    1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1 tsp. vanilla extract

Directions

Pare apples and cut into half-inch cubes. Melt margarine and combine with sugar, beaten egg, and vanilla. Add dry mixture, then apples and nuts. Bake in greased and floured 8-inch square pan in 350 degree oven for 45 minutes. Serve hot or cold, with or without whipped cream or ice cream.

    I LOVE this cake and have made it several times, but the version I use adds 1/4 cup of molasses. Also, I use whole wheat flour and granulated cane juice crystals (Sucanat). And I use organic apples and do NOT peel them. For a festive birthday, I frosted with cream cheese and honey beat together. - 1/23/11
