Ingredients

    2 cucumbers peeled and chopped
    2 pounds ripe tomatoes chopped
    2 sweet red bell peppers seeded and chaopped
    cilantro to taste
    One lime, remove peel and chop
    1 teaspoon powdered cayenne pepper
    3 tablespoons chia seeds


Directions

Makes 8 1-cup servings.

I don't add salt since I serve it with tortilla chips. You can substitute olive oil for flax oil. You may substitute chia seeds for flax seeds.

I roughly chop all ingredients and put them in my food processor. This can also be made using a blender.
