Ingredients

    pablano pepper 4, roasted, seeded and deveined
    Colby and Monterey Jack Cheese shredded, 1 cup
    93% Lean Ground Beef, 8 oz, browned, all fat drained off
    brown rice 1 cup cooked
    Paprika, 1 tbsp
    Chili powder, 1 tsp
    *Ground Cayanne Pepper, 1-3 pinches to taste
    Red Ripe Tomatoes, 1 large, seeded and chopped

Directions

Combine ground beef, rice, cheese, tomatoes and spices in a bowl until thoroughly mixed. Divide into fourths, stuff into peppers. Bake seam side up on parchment lined baking sheet for 20-30 minutes at 400F
