Number of Servings: 3

Ingredients

    6 oz. bag of Tyson Diced Chicken Breast
    1/4 of an apple (I used green), chopped
    1 oz. of chopped pecans
    4 tbsp of Hellman's Light Mayonnaise
    1 tbsp of Sweet Baby Ray's Barbecue Sauce (I think any bbq sauce would work)
    1 English muffin, lightly toasted ( I liked the Thomas' Light Multigrain english muffin)
    about a 1/4 cup of Kraft Finely Shredded Sharp Cheddar Cheese

Directions

Combine the chicken, apples, and pecans in a bowl. Pour the mayo and bbq sauce over the chicken mixture. Blend well. Lightly toast the english muffin. Scoop a spoonful onto each half of the muffin. Sprinkle cheese over each half so that it is covered. Place in microwave on a plate for 1 minute or until cheese is melted. Enjoy!!!
