Introduction

Fresh turkey meatballs go wonderfully on a small pile of whole wheat spaghetti with marinara sauce. Or jazz up a boring sandwich with your own rendition of a meatball sub. They cook up in just fifteen minutes so you can make them ahead and then whip up a batch of from-scratch meatballs for dinner any night of the week. Ingredients

    Ground Turkey, 1.25 unit, yield from 1 lb raw (remove)
    Egg, fresh, 1 large (remove)
    White Bread, 1 slice, thin (remove)
    Sage, ground, 1 tbsp (remove)
    Thyme, fresh, 1 tsp (remove)
    *(Great Value) 100% Extra Virgin Olive Oil Cooking Spray, 1 serving (remove)
    Salt, to taste (not included in nutritional info)
    Pepper, black, 1 tsp (remove)
    *Onion powder, 1 tsp (remove)
    Garlic powder, 1 tsp (remove)

Directions

Preheat oven broiler.

In a large mixing bowl, combine turkey, egg, and seasonings. Toast bread and chop finely for breadcrumbs (this is better than buying breadcrumbs, which have all kinds of preservatives in them). Fold breadcrumbs into turkey mixture.

On a large baking sheet, spray with olive oil spray. Use your hands to roll up meatballs into 1- or 2-T size. Don't make them too big or they won't completely cook through. Place them on the prepared baking sheet, at least 1" apart. Broil meatballs for 10 minutes. Remove from oven and check for crispiness. At this point you can either replace them in the oven to finish cooking for the remaining 5 minutes, or drop them into your marinara sauce to simmer - your call!

Serve hot with spaghetti or on a hoagie roll, with plenty of sauce.
