Ingredients

    *Jennie-O Lean Ground Turkey, 16 oz
    Kale, 4 cup, chopped
    *Onion - Raw (Serving = 2 slices 1/8" thick)
    Garlic, 3 cloves
    *Italian seasoning, .5 tsp
    *Emeril's Southwest Essence, .17 tbsp
    *Bush's Best Reduced Sodium Black Beans, 15 oz
    *Del Monte Diced Tomatoes with Basil, Garlic & Oregano No Salt Added (3.5 servings per can), 3.5 serving
    *Chicken Broth - College Inn Light & Fat Free, 3 cup
    Water, tap, 2 cup (8 fl oz)
    *Salt-free Mrs. Dash Seasoning Blend Table Blend, 0.25 tsp
    *1 tsp Parsley Flakes, .5 serving
    Celery, raw, 1 strip (4" long)
    Pepper, red or cayenne, 1 tsp

Directions

brown 2 gloves garlic ,one thin slice onion in olive oil add other clove garlic and sliced onion into ground turkey with spices. roll into balls drop into dutch oven to brown on all sides. 10 min. Add clean prepared kale. Tear into smaller pieces if large and do not put in stalks. Simmer down some. Add broth water, beans and tomatoes. Let simmer for 10 more min or until desired texture of kale is reached.
Enjoy!
You can add rice pasta or barley if you like.
I am guessing 8- 1 1/2 cup servings each?

    This soup was sooo good, but the recipe directions were very confusing. I ended up having to make it up as I went along. Chopped the onion up fine and mixed with the raw turkey - next time will include other spices to mix in turkey. A fantastic healthy soup! - 7/28/10
