    1/2 tsp baking soda
1/2 cup Sucanat (I used brown sugar)
    1 tbsp pineapple juice
    1 cup unsweetened applesauce
    2 egg whites
    1 tsp pure vanilla extract
1/2 tsp pure coconut extract (optional, I used 3 tbsp unsweetened coconut)
1 cup finely chopped fresh pineapple or 1-8 oz can unsweetened crushed pineapple

Directions

1. Preheat over to 350 F. Line a baking sheet with parchment paper and set aside.

2. In a large bowl, mix together first 4 ingredients. Set aside.

3. In a small bowl, stir Sucanat into pineapple juice.
