Ingredients

    1 box dry carrot cake mix (betty crocker or the like)
    1 medium zucchini grated
    1 can packed pumpkin
    1/2 cup water

Directions

Mix all ingredients, pour into muffin cups and bake at 350. Makes 18 muffins.

  • These were good. I like them because you can't even taste the zucchini but they're a really filling snack because they're so dense (and full of veggies!). Thanks for the recipe! - 10/23/07

  • MMM, I couldn't wait for them to cool. They are yummy and flavorful, but I do love pumpkin and like getting in the veggies any chance I can, especially for the kids. Healthy for us all to snack on too! - 10/12/07
